Curious to know
Spelt in nature features a coating called 'Glumetta'; the decortication allows the removal of the outer coating, thus obtaining bare integral grains. Subsequently, the grain is 'Pearled', ie removing the outer layer of the carioxide, called the pericarp, which makes the color cereal lighter. In this way the cereal does not lose any nutritive principle and is faster to cook.
Ideal for soups, cold salads and sweets. Great in combination with legumes and vegetables, exalting tastes and fragrances.
