Salumificio Santoro
is a small artisan company located in the heart of Apulia that produces traditional salami since 40 years. The philosophy of the company is based on tradition & simplicity.

Salumificio Santoro is one of the 10 artisans that produces the most authentic pieces of Charcuterie from Apulia: Capocollo di Martina Franca. It is defined by Slow Food Presidium as a typical ancient salami of the gastronomic culture of this region, already well known in the XVIII century.

Apart of Capocollo di Martina Franca, Salumificio Santoro produces many other cured meats, all tied to the traditions of teritory and totally handmade.

All cured meats produced by Salumificio Santoro have some common features: the first quality meat is marinated with "vino cotto" (cooked wine), a non-alcoholic wine made of cooked must; then the meats are smoked with bark of Macedonian oaks exclusively from that region.

Moreover, the main production is concentrated in wintertime because that is when the microclimate is ideal for the production of meats in the traditional way of Apulia.
