Sicilian Pesto

Ingredients (4 portions):
tomatoes 500 g
extra virgin olive oil 150 ml
salt & 1 clove of garlic
fresh basil
Parmesan 100 g
Ricotta 150 g
ground pepper & pine nuts

Preparation:

1. Divide the tomatoes in half. Once divided, remove the seeds and excess juice. Put the tomatoes in a blender together with the fresh basil, garlic divided in half and dried pine nuts. Then add the grated parmesan, ricotta and salt & pepper to taste.

2. After adding all the ingredients pour the olive oil and blend at low speed. When the mixture reaches the desired consistency, check if even need to add salt and ground pepper.
Now pesto is  ready to enrich and color your pasta. Buon appetito!
