The rich soil of Salento combined with the beningn climate, together with the positive sea influence creates the most suitable area for all vegetables productions.

"I Contandini" is probably the most authentic farm located in Salento. Since generations, they have been producing a range of excellent vegetables, characterised by genuine taste and flavours.

"I Contandini" farm adopted an integrated production and follows all the phases from transpalting to harvest. They grow in the nearby fields to the establishment, with integrated production, more than twenty acres of tomatoes, eggplant, zucchini, peppers and artichokes.

 All vegetables are harvest by hand and a first selection is done in the fild, then are washed and cut manually. Soon after the cutting, there is a very important phase, that is the product salting, carried out manually by expertly "contadini". Finnally the vegetables are sun-dried on racks according to tradition: an ancient practice and almost completely abandoned because it is difficult and delicate. The result is a product with unique organoleptic properties, authentic taste and flavour.

The flavoursome vegetables are preserved in olive oil and artisan-prepared without preservatives, so that they remind tasters the authentic flavors of homemade preserves.
